Not only are these homemade fudgesicles delicious…they are deceptively delicious. 😉 

If you have learned anything about me by now, it’s that I like food that is easy to prepare. But it also needs to be healthy. Especially since I have the pickiest kid in this hemisphere. 

So what’s a mom to do? You get creative. My kids love (and beg for) my healthy chocolate pancakes, so I figured why not make these delicious fudgesicles healthy as well? 

I grabbed my blender, and got to it. 

This recipe is super easy, and I’d imagine extremely customizable. You could use carrots instead of spinach, honey instead of maple syrup, and coconut or almond milk instead of regular milk, if you needed to make it dairy free. This is a recipe ANYONE can enjoy!! Assuming they like chocolate.

Honestly, it makes me sad when I hear of people who “don’t care for chocolate”… um….what?! Chocolate is one of my main food groups, so… I guess we can’t be bffs.

Buuuuuut, if you’re a chocoholic like me, then you will definitely enjoy this recipe. Plus, you can feel confident that you are feeding your kids (and yourself) something that’s not filled with refined sugars and who-knows-what. All you need are 6 simple, easy, REAL ingredients, some popsicle molds, and a freezer. Voila! You have got yourself a delicious, healthy, cold treat, to cool you off on a hot summer day!

The Nugget actually watched me make these, so he knows that I put spinach in these…and he begged me for one all night long. Bless his little 3 year old heart. He doesn’t understand the concept of having to wait for something to freeze. I guess the saying, “Absence makes the heart grow fonder” rings true here…

When I went to pick him up from school the day after I made these, he ran up to me and said, “Mama, I need to ask you a question…I peeped in the potty!” 

Ok, so first, y’all have no idea how HUGE this is!! 

I bent down and said, “Yay!!! That means you get an M&M when we get home!!” He said, “No…I get a popsicle.” Well, alrighty then.

Yes, sweet boy. Yes, you can absolutely have a popsicle when we get home. Today, we are celebrating a big win for the Nugget. Being brave enough to “peep” in a big kid potty. My heart is soaring right now. And so is his…

These were pretty much a hit all around.

Deceptively Delicious Homemade Fudgesicles

Ingredients

  • 1 cup baby spinach
  • 1 cup whole milk
  • 1/2 cup plain whole greek yogurt
  • 1/2 cup unsweetened cocoa powder
  • 6-8 Tbls maple syrup (to taste)
  • 1/2 tsp pure vanilla extract

Instructions

  1. In a blender, pureé the spinach and milk, until nice and smooth.
  2. Add in yogurt, cocoa powder, syrup and vanilla, and mix until well combined.
  3. Pour into popsicle molds and stick in freezer until ready.
  4. Enjoy!
