This is a hard post for me to write.

I love bread.

Probably more than Oprah, if I’m being honest. Like, so much that I am shedding a tear at what is to come.

But it must. At least for now. 

After a lot of research, and perusing through various health articles and dental health sites, I have come to the conclusion that I must make a big change in the way I eat. 

I know what you must be thinking… “Didn’t you already make this HUGE change by cutting out most processed foods from your diet?! How can you possibly do more?!” 

Well friends, I was in the same boat as you. I have been telling myself that I am crazy…trying to talk myself out of making any more changes. But then I realized something. 

Change is GOOD. 

With change comes challenges. And hopefully those challenges will bring about perseverance. And in the end, by persevering…we shall (hopefully) succeed!

Through my digging, I found that wheat can wreak more havoc on our bodies than we may realize. Those of you with an auto-immune issue and serious gut issues have already come to that conclusion. Some people choose to tolerate the pain they are dealing with. Others have taken the leap to do something about it. But did you know that wheat can cause way more issues than just those I mentioned above? It can cause issues with blood sugar levels, it ages your skin, can bring about several skin-related issues, including psoriasis, elasticity, bone density issues (due to being pH disruptors),  and severe dental issues, just to name a few. 

Now, sure…the wheat of ‘days of old’ was probably ok for us to consume. I fully believe God gave us grains to help sustain us. However, due to modern “advances” and farming techniques, all the good in grains are removed or not even present. Most are treated with such nasty chemicals, that we are slowly killing ourselves. It’s sad. It really is. I love bread…in all forms! But sadly, the gluten and other issues that come along with wheat and grains are leaving behind less than desirable side effects. For me, those are resulting in tooth issues. Now, I have always had genetically bad teeth, but had I known the dangers that (gluten) was doing to my mouth, I would have made a change a LONG time ago. But alas… hindsight is 20/20 as they say. 

But now I know. And I am ready to make a change. 

Going forward, I will be providing more gluten-free / wheat and grain free recipes for you all to enjoy along with me! Since this is currently a solo adventure for me – my family is not ready to jump on that wagon quite yet – I will still be posting some recipes that include these items. Let’s face it. I like to bake. And my kids and Mountain Man enjoy my baking… and until I find a suitable substitution for some of my recipes that they will eat, there will be whole wheat involved.
