I’m always looking for quick, easy (and healthy) snacks to keep on hand for my little munchkins. The Nugget may not eat most things we fix, but he LOVES to snack, so if I can find an easy, non-processed snack to give him, I’m going to do my best to keep it on hand!


That’s why I was so stoked to find this EASY cheese cracker recipe. I found this on Pinterest, via Five Heart Home‘s blog, and to make it real food approved, I simply swapped out the regular flour for whole wheat flour, and organic Worcestershire sauce. My oldest even got to help roll out the dough and poke the holes in the center (you know, to make ’em more “authentic”) 😉

What you’ll need:

– 1/2 cup (1 stick) butter, chilled and cut into cubes
– 4 ounces extra-sharp cheddar cheese, freshly grated (about 1 cup….we LOVE Cabot cheese brand!)
– 1/2 teaspoon salt
– 1/8 teaspoon white pepper
– pinch of cayenne pepper
– 1 cup plus 2 tablespoons whole wheat flour
– 1 teaspoon organic Worcestershire sauce

Recipe:

Step 1: Place the butter, grated cheese, salt, white pepper, and cayenne in the bowl of a food processor.
Pulse until butter breaks up into small pieces and the mixtures resemble cottage cheese.

Step 2: Add the flour to the food processor and pulse until the mixture resemble damp breadcrumbs. Add the Worcestershire sauce and pulse a couple more times. The dough will be moist but it should come together in your hands. (*note: if mixture seems too crumbly and does not come together well, sprinkle water by the 1/2 tsp until it reaches a consistency which allows you to mold dough)

Step 3: Turn the dough out onto the counter or silicone mat. Knead it a couple times to form a ball. Shape into a disk, wrap in plastic wrap, and place in the refrigerator to chill for 1 hour.

Step 4: Place the oven rack in the center position and preheat to 350 degrees. Line a large sheet pan with parchment paper. Remove the dough from the fridge and very lightly flour your work surface. Roll the dough into a rectangular shape, measuring roughly 1/8 inch thick (if the dough seems sticky, add some flour to your rolling pin).

Step 5: Using a pizza cutter, pastry wheel or sharpe knife, cut the dough vertically 1-inch wide then cut horizontally 1-inch wide strips to make 1-inch squares. (I used a pizza cutter and a ruler so my lines were straight) 😉

Step 6: Form a ball with any leftover dough and repeat step 5.

Step 7: Take a wooden skewer and make a small hole in the center of each square. Transfer the squares to your baking pan. The squares shouldn’t spread, so you don’t need to space them out too much.

Step 8: Bake for 15 minutes, or until the edges JUSt start to brown.

Step 9: Transfer crackers to cooking rack and allow to cool completely before storing in an airtight container.

Step 10: ENJOY!

These went over with flying colors with everyone in my household!
