Have you ever gotten a wild hair to try something healthy and pray that your kids would actually eat it? That’s basically what happened at dinner last night.

The Nugget has been extra picky these days, and I was tired of fighting with him to eat his dinner… or any meal for that matter. So when it came time to get dinner started, I had a mild panic attack. I could just give him leftover macaroni and cheese, but really, where was the health value in that? I needed to get some nutrients in this kid. STAT. 

My mind began racing with a few of his favorite foods, that he hasn’t eaten in a while. Breakfast is always a safe bet with him. With all three of the kids, really. But how can I make it more nutritious than just oatmeal, or pancakes? Don’t get me wrong, those are perfectly good and acceptable healthy food options. I just felt like I needed to make something a bit more…substantial. 

A lightbulb went off.

Chocolate pancakes. With spinach… and carrots… and a Banana… and maybe some flax seed. 

What happened next can only be described as divine intervention. I just started throwing things into my blender, hoping…nay, praying that it would be edible. That if I hyped up the whole “chocolate pancake !” thing, my kids would be super excited and at least try it. 

Well, that’s exactly what happened. What’s even better? They ALL legit begged for 2nd’s…and THIRD’s! 

I will definitely be making these again! Mama for the win!


Crazy Healthy Chocolate Pancakes

Ingredients
  1. 3 eggs
  2. 1 1/2 cup whole milk
  3. 1 large carrot - chopped into cubes
  4. 1 cup baby spinach leaves
  5. 1 banana
  6. 3 Tbls unsweetened cocoa powder
  7. 1/4 tsp salt
  8. 2 Tbls honey
  9. 1 Tbls ground flax seed
  10. 1 tsp baking soda
  11. 1 cup old fashioned oats
  12. 1 cup whole wheat flour
Instructions
  1. In a blender, add carrot, spinach, banana, milk, and eggs. Puree until all ingredients are well blended and there are no chunks.
  2. Add cocoa powder, salt, honey, flax, and baking soda, and use the mix setting to combine them into the mixture.
  3. Pour batter into a large bowl. It will be very runny.
  4. Add in flour, and oats - whisk gently to combine.
  5. Heat skillet over medium low heat. Using a little butter to coat the pan, pour a small amount of batter (about 1/4 cup) onto the skillet and cook until the batter just starts to bubble.
  6. Flip pancake over and cook until done (about a minute, depending on the size of your pancakes).
  7. Serve warm, with pure maple syrup. Enjoy!
Notes
  1. For an added chocolate kick, you can add some mini chocolate chips!
